Just wondering what all the grill masters and Chef No Tell's were
planning on fixing for Memorial Day.

Since I'm on duty Monday I will be eating at the firehouse. I'm sure our main guys that cook will have a nice spread for us. I just hope we stay in the house long enough to enjoy it.

I hope that all you Redskinsheads have a safe and fun weekend. I'm not one to tell people what to do, but please don't drink and drive. We need all of you here for the 2008/09 season. Smiley

Mustard Based Rib Sauce (Carolina Style)

1/2cup of brown sugar
3/4 cup apple cider vinegar
1/4 cup of water
1 cup of French's yellow mustard
1 yellow onion
2 tablespoons chili powder
1/2 teaspoon soy sauce
1/4 teaspoon cayenne
2 tablespoons butter
Last but not least a 1/2 cup of Ancient Age Whiskey. Enjoy!

you should probably mention the region of NC seeing as the huge divide among the state for bbq sauces :p

sounds good though, i love vinegar and mustard based sauces.. that ketchup crap is for kids

Chesapeake Style Ribs  5-6 lbs

Simmer ribs in lightly salted water with a bay leaf and 1/2  bottle of beer for 30 minutes, after 30 min. add 1/2 of an onion continue to simmer for another 15 min.

You may dry rub them with Old Bay if you choose but do so lightly.

Marinade for at least two hours using fresh chopped garlic, vegetable oil, Old Bay Seasoning and the second half of beer.

BBQ Sauce

2 cups of ketchup
1/4 cup of vinegar
3 TBLSPs of brown sugar
1 TBLSP dry mustard
1 grated onion
1 1/2 TBLSP of minced garlic
1 TBLSP Worchestire Sauce
2 TBLSP of horseradish sauce
2 TBLSP of lemon juice
1/2 TBLSP of salt (if wanted)
3 TBLSP of whipped butter

Mix all liquid ingredients and butter together then add all dry ingredients.
Let mixture simmer for 15 minutes and then allow to cool on the stove for at least 1/2 hour

Brush sauce on ribs while grilling.  Grill ribs until prefered serving temperature is reached

If you did not dry rub with Old Bay then have it available for guests to shake on themselves in order to get that true Chesapeake flavor

Lol..only a dude would put an 'L' in TBSP..lol  Sounds good tho...I may try it...I don't know about the old bay tho...that's strictly a seafood thing for me...but who knows?  It may be interestingly different. Wink Grin

Only someone not from Maryland would think that Old Bay only goes on seafood Smiley.  We put it on chicken as well, mainly wings.

I mix in some Old Bay in almost every breakfast that I eat.  Old Bay on my eggs...  Old Bay on my hash browns.  Never enough Old Bay.
